Easy Curry Chicken Sandwich

If you're like me, you probably like to put together a quick enjoyable lunch and then get on with your day. But, who wants to same old thing all the time....PB&J, Toasted Cheese, or Deli Meat? I found when my first child was very small that it was much easier for her to eat canned meat on a sandwich in stead of deli meat so I started to experiment with it. Here is a favorite....



Easy Curry Chicken Sandwich

Set your oven to broil. Drain a 12.5 ounce can of Chicken (we get the Kirkland Brand at Costco and it is very good.) and put it in a bowl. Measure in 1 cup of shredded cheese and couple large spoonfuls of mayo. Add some sprinkles of Curry (depending on how much you like this taste) and some salt. Mix it all together. Lay out 8 pieces of bread on a baking sheet and put the meat mixture on 4 pieces and butter the other four pieces. Put in oven and watch till cheese is melted and buttered bread pieces are toasted. Take out and place the toasted pieces of bread face down on the meat topped pieces. You can also add sliced tomato's, lettuce or pickles for added flavor and variety. Enjoy!

Now, I realize this recipe may not make the Taste of Home Cookbook but, it's easy, my kids can eat it and love it, and I enjoy it too! And that's what it's all about.
