1 cup milk
1 cup whole wheat pastry flour
1/2 teas. salt
2 tbsp. butter, melted
Place the eggs, milk, flour and salt in a blender; cover and process until smooth. Pour the melted butter into and ungreased 13 by 9 in. baking dish and cover the bottom with it. Add the batter. Bake at 400 degrees for 20 minutes. The pancake will rise up on the edges of the pan and bubble up in the middle. This is fine. It will fall back down when it is taken from the oven. Cut into square pieces and serve with pancake toppings.
This recipe is super easy for saturday breakfasts, brunches, and light suppers. We like to eat it with pear sauce and honey sweetened yogurt. Then you don't get the 'breakfast sugar high'. Maple syrup is also tasty on these. I usually 1.5 this recipe and put it in a larger pan for our family of 5.

Do you have a cold remidy? :) I would post a recipe but all we seem to be eating is chicken noodle soup lately!
Our kids had a 2-hour delay start to school this morning so we had time to make these. They were very good! We had them with some pear jam that didn't set right so we've been using it as syrup. :)
