Crab Croissant Melts


1 16 ounce package crab or imitation crab meat
1 cup chopped celery
1/2 cup chopped onion
1/2 cup mayonnaise
dill weed
Johnny's Seafood Seasoning
6 croissant rolls
shredded cheese (optional)

Set oven to broil. Flake apart crab meat in a medium bowl. Add celery and onions and mayonnaise and mix together. Add dill weed and seafood seasoning to taste. Cut croissants in half and place open on a large baking sheet. Spread mixture on top evenly on half of each croissant. Add shredded cheese to the top of mixture if desired. Place in the oven to broil. Watch closely and remove when mixture is warm and bubbly and cheese is melted. Close the croissants and serve warm.

Sprouts

Try this Indoor Jar Garden for some Fresh Living Food

You will need a jar and a lid with drain holes and seeds which you can buy at a Health Food Store. My seed mix is cabbage, radish, and alfalfa.

My Book (The Sprounting Book by Ann Wigmore) gives me good directions about sprouting all different kinds of seeds and nuts. So for alfalfa multi-sprout mix I need about 3 tablespoons of seeds. I place them in the jar, fill the jar about half full of water and screw on my yellow lid with the small drain holes.
Let sit for six hours.
Pour our water, turn upside down and let sit near sunny window but not in direct sunlight.
Rinse seeds and pour off water at least once a day. You can see the seeds are beginning to sprout.
About a day later.

Now I change to my green lid with bigger holes and run water in until it overflows and spills out some of the seed hulls.
Turn over and let sit for more time.
I change the lid again to the biggest holes to rinse and drain sprouts and turn upside down until they look just right. (This whole process takes about 7 days!)
When they look just right I rinse them again and put in a ziplock bag to store in the fridge.

Now you can add them to salad, sandwiches, or eat them alone with this....YUM!

Barbecue Beef Sandwich


Remember the Easy Chicken Curry Sandwiches? Here is another favorite EASY sandwich that I make often.

Set your oven to broil. Drain a 12.5 ounce can of Canned Beef (we get the Kirkland Brand at Costco and it is very good.) and put it in a bowl. Measure in 1 cup of shredded cheese and then add Barbecue Sauce (we like Sweet Baby Rays) and Ketchup to desired taste. Mix it all together. Lay out 8 pieces of bread on a baking sheet and put the meat mixture on 4 pieces and butter the other four pieces. Put in oven and watch till cheese is melted and buttered bread pieces are toasted. Take out and place the toasted pieces of bread face down on the meat topped pieces. You can also add sliced tomato's, lettuce or pickles for added flavor and variety. Enjoy!

Easy Curry Chicken Sandwich

If you're like me, you probably like to put together a quick enjoyable lunch and then get on with your day. But, who wants to same old thing all the time....PB&J, Toasted Cheese, or Deli Meat? I found when my first child was very small that it was much easier for her to eat canned meat on a sandwich in stead of deli meat so I started to experiment with it. Here is a favorite....



Easy Curry Chicken Sandwich

Set your oven to broil. Drain a 12.5 ounce can of Chicken (we get the Kirkland Brand at Costco and it is very good.) and put it in a bowl. Measure in 1 cup of shredded cheese and couple large spoonfuls of mayo. Add some sprinkles of Curry (depending on how much you like this taste) and some salt. Mix it all together. Lay out 8 pieces of bread on a baking sheet and put the meat mixture on 4 pieces and butter the other four pieces. Put in oven and watch till cheese is melted and buttered bread pieces are toasted. Take out and place the toasted pieces of bread face down on the meat topped pieces. You can also add sliced tomato's, lettuce or pickles for added flavor and variety. Enjoy!

Now, I realize this recipe may not make the Taste of Home Cookbook but, it's easy, my kids can eat it and love it, and I enjoy it too! And that's what it's all about.
