Hearty Oatmeal Pancakes




Soak 1 1/2 c. oats in 2 c. milk for 5 minutes.

Whisk together:
1 c. whole wheat flour
2 1/2 t. baking powder
1 t. salt
2 T. sugar

Add to oats mixture:
2 eggs
1/3 c. melted butter or oil

Whisk dry ingredients into moist ingredients just until combined.
Ladle onto preheated griddle... you know the rest! :)

And these aren't complete without a layer of peanut butter and our favorite hot syrup. My dad and mom always made this and my kids love it, too.

Dissolve 2 c. sugar in 2 c. boiling water. Add 1 tsp. maple flavoring.

Also good topped with apple sauce or spiced peaches, or with blueberries added to the batter.

I double this for our family... there's usually just enough left to re-warm and serve with fried eggs the next day.
